Ingredients

For the Asian Marinade:
- 2 Cloves Fresh Garlic, Crushed
- 1 Tablespoon Finely Grated Ginger
- 1 Chili, Chopped and De-seeded
- 1 Tablespoon Honey
- Squeeze of Lemon Juice
- 1 Cup Soy Sauce
For the Ribs:
- 2 Racks of Lamb Ribs
- 1 Cup Asian Marinade
- Limes for Garnish
Method
- Prepare the Marinade: In a large bowl, combine all marinade ingredients and stir until well mixed.
- Marinate the Ribs: Place the lamb ribs in the bowl with the marinade. Cover and refrigerate for a few hours or overnight.
- Prepare the Grill: Set up your COBB Grill and light a CobbleStone, waiting a few minutes until it turns grey. If using briquettes, prepare them instead. Place the Grill Grid and Dome Lid on the COBB Grill and heat for at least 5 minutes.
- Cook the Ribs: Place the marinated ribs onto the Grill Grid and close the Lid. Cook for about 40 minutes to an hour, turning once or twice, until the ribs are sticky, caramelized, and tender.
- Serve: Remove the ribs from the COBB and garnish with fresh lime wedges.
